Turkey Palow
Palow, a fragrant rice dish, has deep roots in the culinary traditions of Central Asia and the Middle East. Known as “pilaf” or “pulao” in other regions, this dish has been a staple of celebratory meals for centuries, gracing the tables of grand feasts and everyday gatherings alike. Its origins can be traced back to the Persian Empire, where its method of preparing rice with spices, broth, and meat was first documented. Over time, Palow evolved as it travelled along the Silk Road, absorbing influences from various cultures.
The beauty of Palow lies in its balance of flavours and textures. It typically features fluffy, fragrant rice cooked with aromatic spices like cumin, cinnamon, cardamom, and cloves, combined with tender meat and vegetables. Originally made with lamb or chicken, Palow adapts wonderfully to halal turkey breast, offering a lighter, leaner protein option that’s still rich in flavour. At Riverside Foods, we’re proud to provide high-quality halal turkey breast, ensuring everyone can enjoy this timeless dish with confidence.
During Ramadan, Palow is an excellent choice for Iftar. Its hearty ingredients restore energy after a day of fasting, while its blend of warming spices and tender meat provides both comfort and nourishment. The spices, often originating from ancient trade routes spanning India, Persia, and Arabia, not only enhance the dish’s flavour but also carry a sense of history and tradition.
By substituting turkey breast, the dish becomes an even healthier option without compromising on taste. Serve it with a side of cooling yoghurt or a crisp cucumber salad for a complete Iftar meal. Whether enjoyed at a family table or shared among friends, Turkey Palow is a delicious way to embrace the rich culinary heritage of Ramadan.
Ingredients
- 500 g halal turkey breast, diced
- 200g basmati rice
- 3 tablespoons ghee or vegetable oil
- 1 large onion, finely sliced
- 2 cloves garlic, minced
- 1 tbsp fresh ginger, minced
- 2 medium carrots, peeled and diced
- 100g green peas (fresh or frozen)
- 1 tsp cumin seeds
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1 tsp ground cinnamon
- 1 tsp ground black pepper
- 1 tsp ground turmeric
- 4 green cardamom pods
- 2 bay leaves
- Salt to taste
- 800ml chicken or vegetable broth
- Fresh cilantro or parsley for garnish
Method
- Prepare the Rice: Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for about 30 minutes, then drain.
- Sauté Aromatics: In a large, heavy-bottomed pot, heat the ghee or oil over medium heat. Add the cumin seeds, cardamom pods, and bay leaves. Sauté for a minute until fragrant.
- Cook Turkey: Add the diced halal turkey breast to the pot. Cook until browned on all sides. Remove the turkey pieces and set aside.
- Sauté Vegetables: In the same pot, add the sliced onions. Sauté until golden brown. Add the minced garlic and ginger; cook for another minute.
- Add Spices: Stir in the ground coriander, ground cumin, ground cinnamon, ground black pepper, and ground turmeric. Cook the spices for a minute to release their flavours.
- Combine Ingredients: Return the browned turkey to the pot. Add the diced carrots and green peas. Stir to combine all ingredients.
- Add Rice and Broth: Gently fold in the soaked and drained basmati rice. Pour in the chicken or vegetable broth. Add salt to taste. Bring the mixture to a boil.
- Simmer: Once boiling, reduce the heat to low. Cover the pot with a tight-fitting lid. Let it simmer for about 20 minutes, or until the rice is cooked and the liquid is absorbed.
- Rest: Remove the pot from heat. Let it sit, covered, for an additional 10 minutes to allow the flavours to meld.
- Serve: Fluff the Palow with a fork. Garnish with fresh cilantro or parsley. Serve warm, perhaps with a side of yogurt or a fresh salad
- Adjust the spices according to your preference.
- For added richness, you can sprinkle some toasted nuts or dried fruits over the Palow before serving.
