Ingredients
- 4 x Riverside turkey koftas
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp smoked paprika
- ½ tsp chilli flakes (optional)
- 2 garlic cloves, minced
- 1 small onion, finely grated
- 1 tbsp chopped fresh coriander
- 1 tbsp olive oil
- Salt & pepper, to taste
For the Roasted Vegetables:
- 1 courgette, sliced
- 1 red pepper, sliced
- 1 red onion, cut into wedges
- 1 tbsp olive oil
- Salt & pepper, to taste
To Serve:
- 4 gluten-free flatbreads
- 4 tbsp hummus
- Handful of rocket leaves
- 1 red chilli, finely chopped
- 1 tbsp chopped fresh coriander
- Chilli sauce, for drizzling
Method
-
Prepare the kofta mixture – In a bowl, mix the turkey mince with cumin, coriander, paprika, chilli flakes (if using), garlic, onion, fresh coriander, olive oil, salt, and pepper. Combine well and shape into small sausage-like koftas around skewers (or shape into patties if you don’t have skewers). Chill in the fridge for 15-20 minutes to firm up.
-
Roast the vegetables – Preheat the oven to 200°C (180°C fan). Toss the courgette, red pepper, and onion with olive oil, salt, and pepper. Spread on a baking tray and roast for 20-25 minutes until tender and slightly caramelised.
-
Cook the koftas – Heat a griddle pan or frying pan over medium heat. Cook the koftas for 8-10 minutes, turning occasionally, until golden brown and cooked through.
-
Assemble the dish – Warm the flatbreads in a dry pan or oven. Spread each flatbread with hummus, then top with rocket, roasted vegetables, and the turkey koftas.
-
Garnish & serve – Drizzle with chilli sauce and sprinkle with chopped red chilli and fresh coriander. Serve immediately and enjoy!
