Turkey Rashers, Sage & Onion Stuffing

Course : Lunch/Dinner | Cuisine: British | Servings : 4 persons | Cook Time : 1.5 hours

Christmas is a time for family, food, and festive traditions, and nothing brings comfort to the table quite like a delicious stuffing. Our Turkey Rasher, Sage, and Onion Stuffing is not only bursting with flavour but is also adaptable to meet halal dietary needs, making it the perfect addition to your festive spread.

What Makes This Stuffing Special?

Unlike traditional stuffing cooked inside a turkey, this recipe is prepared separately in the oven, ensuring everyone gets that irresistible crispy topping. By using halal-certified turkey rashers and substituting regular broth with halal-certified turkey stock, this dish becomes a festive treat for everyone at the table.

To elevate the flavour even further, if you’re roasting a turkey, drizzle some of its drippings over the stuffing before baking. This step infuses the stuffing with an extra depth of flavour, bringing it one step closer to perfection.

Ingredients

Here’s what you’ll need to make this show-stopping stuffing:
– Day-old bread, torn into bite-sized pieces
– Turkey rashers, chopped
– Onion, finely diced
– Fresh sage, chopped
– Halal-certified chicken or turkey broth
– Butter for greasing the casserole dish
– Seasonings: salt, pepper, and optional herbs

Why It’s Great for Christmas

1. Halal-Friendly: This recipe ensures everyone can enjoy the holiday meal, adhering to dietary preferences without compromising on taste.
2. Crispy Perfection: Cooking it separately from the turkey guarantees a golden, crisp top layer while keeping the inside moist and flavourful.
3. Customisable: Add extras like dried cranberries, nuts, or fried sage leaves to make it uniquely yours.

Cooking Instructions

1. Prep the Bread

Tear bread into pieces or cut into cubes. If it’s fresh, dry it out by baking at 150°C for 8–10 minutes.

2. Sauté the Turkey Bacon and Onion

Cook turkey rashers in a skillet until it begins to crisp. Add diced onion and cook until translucent. Stir in sage and cook for another minute.

3. Combine Ingredients

Mix the turkey rashers, onion, and sage mixture with the bread. Pour over halal broth, stirring gently until all the bread is moist but not mushy.

4. Bake to Perfection

Transfer the stuffing into a greased casserole dish, spread it evenly, and cover with foil. Bake at 200°C for 30 minutes. Remove the foil and bake for another 10–15 minutes until crispy and golden on top.

5. Optional: Add Turkey Drippings

If you’re roasting a turkey, drizzle its drippings over the stuffing before baking for a flavour boost.

Serve and Enjoy

This turkey rasher, sage, and onion stuffing is best served warm, fresh out of the oven. Garnish with fresh herbs or turkey bacon bits for a festive finish.

With its halal-friendly approach, everyone can join in the holiday cheer—one crispy bite at a time.

Ingredients

  • 1.5 kg Riverside turkey rasher, chopped
  • 3 large onions, chopped
  • 100g fresh sage, chopped
  • 3 loaves white bread, cut into cubes
  • 3 tsp sea salt
  • 3 tsp garlic powder
  • 3 tsp
  • 1.5 tsp freshly ground black pepper
  • 1.5 tsp turmeric
  • 1 L turkey or chicken broth/stock
  • 3 tbsp butter

Method

1: Tear the bread into bite-sized pieces or cut it into cubes and place them in a large mixing bowl. Preferably use bread that’s a day or two old. If it’s fresh, dry the cubes out first by spreading them in a single layer on a baking sheet and baking at 300°F/150°C for 8–10 minutes (the inside should still be soft).

2: Cook the chopped turkey rashers in a large skillet over medium-high heat until it starts to crisp up (you’ll notice the fat in the pan looking foamy). Add the chopped onions (don’t drain the drippings) and continue cooking until the onions turn translucent. Stir in the sage and cook for another minute. Remove from heat.

3: Pour the turkey rashers, onion, and sage mixture over the bread. Add your preferred seasonings and mix gently to combine.

4: Slowly pour turkey or chicken broth over the bread mixture, stirring gently as you go. Add just enough broth to make the bread moist but not mushy. Stir until everything is well combined and adjust seasonings to taste.

5: Transfer the mixture to a buttered casserole dish, spreading it into an even layer. Cover the dish with foil and bake at 400°F/200°C for 30 minutes. Then uncover and bake for another 10–15 minutes until the top is golden brown and crisp.

6: Serve the stuffing warm. For garnish, consider a fresh sprig of sage, some chopped parsley, or even extra turkey bacon bits and fried sage leaves for added flair.
