Tasty Turkey Fajitas

Course : Lunch/Dinner | Cuisine: Mexican | Servings : 2 persons | Cook Time : 30 minutes

Fajitas, a dish that traces its origins to the ranches of South Texas and Northern Mexico, have become a beloved staple in kitchens around the world. The name “fajita” comes from the Spanish word “faja,” meaning “strip” or “belt,” referring to the strips of meat traditionally used in this dish. Originally made with skirt steak, fajitas have evolved to include various proteins, making them a versatile and tasty option for any meal. Our Turkey Fajitas offer a lean, protein-packed twist on the classic recipe, perfect for those looking to enjoy a healthy yet delicious meal.

For those who love the bold, citrusy taste of coriander (also known as cilantro), this herb is often a key ingredient in fajitas. However, if you’re one of the many people who have the “soap gene”—a genetic variant that makes coriander taste soapy—feel free to omit it from this recipe. You can replace it with fresh parsley or simply leave it out; the dish will still be full of flavour.

Turkey Fajitas are not only delicious but also a fun, interactive way to enjoy a meal. The combination of tender turkey strips, sautéed peppers, and onions, all wrapped in a warm tortilla, creates a delightful mix of textures and flavours. This recipe is quick and to prepare, making it an excellent choice for busy restaurants and food trucks. Packed with protein and vibrant vegetables, turkey fajitas are a nutritious choice that doesn’t compromise on taste.

Ingredients

  • 500g Riverside turkey breast, cut into thin strips
  • 2 tbsp olive oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp chili powder
  • Salt and pepper to taste
  • Juice of 1 lime
  • Fresh coriander (optional)
  • Tortillas, to serve
  • Optional toppings: sour cream, guacamole, shredded cheese, salsa

    Method

  • Prepare the Turkey: In a large bowl, toss the turkey strips with cumin, smoked paprika, chili powder, salt, and pepper. Set aside.
  • Cook the Vegetables: Heat 1 tbsp of olive oil in a large pan over medium-high heat. Add the sliced peppers and onions, and sauté until they start to soften, about 5-7 minutes. Add the minced garlic and cook for another 2 minutes. Remove the vegetables from the pan and set aside.
  • Cook the Turkey: In the same pan, heat the remaining olive oil. Add the seasoned turkey strips and cook for 5-7 minutes, or until fully cooked and slightly browned.
  • Combine: Return the cooked vegetables to the pan with the turkey. Squeeze the lime juice over the mixture and toss everything together until well combined. If using, stir in fresh coriander leaves.
  • Serve: Warm the tortillas in a dry skillet or microwave. Serve the turkey fajita mixture in the tortillas, and add your favourite toppings.
