Pan Roasted Potatoes
Golden, Crispy Pan Roasted Potatoes: The Perfect Pair for Roasted Turkey
No festive meal is complete without a side of perfectly roasted potatoes, and when paired with a beautifully roasted whole turkey, they become the highlight of any feast. This recipe for pan-roasted potatoes takes your side dish game to the next level by incorporating rendered turkey fat. The result? A golden, crispy exterior and a soft, fluffy interior that perfectly complements the rich, succulent turkey.
Why Turkey Fat Makes the Difference
Using turkey fat in your roast potatoes adds layers of flavour and indulgence to a classic side. As the turkey roasts, the fat collects, rich with the aroma of herbs and seasoning. This fat not only enhances the potatoes’ flavour but also ensures the ultimate crunch — perfect for impressing diners. Whether you’re serving a festive banquet or a Sunday roast, these potatoes pair effortlessly with turkey and other hearty accompaniments like roasted vegetables, stuffing, and gravy.
Tips for Achieving Roast Potato Perfection
1. Parboil First: Ensure a fluffy interior by boiling your potatoes until just tender before roasting.
2. Hot Fat Equals Crispy Potatoes: Ensure the turkey fat in your roasting pan is hot. Adding the potatoes to hot fat ensures an immediate seal, locking in texture and flavour.
3. Season Generously: Salt, pepper, and optional fresh rosemary or thyme elevate the taste to complement the roasted turkey.
A Feast to Remember
Serving pan-roasted potatoes alongside a roasted turkey creates a harmonious balance of rich flavours and textures. Whether you’re crafting menus for a Christmas feast, banquet hall, or a festive carvery, this dynamic duo is sure to leave your diners asking for seconds.

Ingredients
- 500 g turkey fat
- 2.5kg potatoes (such as King Edward’s)
- 2 tbsp semolina
Method
1. Preheat the oven to 250°C (230°C Fan/Gas Mark 9/500°F). Place your chosen fat in a large roasting tin and heat it in the oven for 20–30 minutes until it’s searingly hot.
2. Peel the potatoes and cut each one into three pieces by slicing off the ends at an angle, leaving a triangular middle section. This shape maximises surface area for a crisp finish.
3. Place the potato pieces into a pot of salted, cold water. Bring to a boil and cook for 4 minutes. Drain the potatoes well using a colander, then return them to the dry saucepan.
4. Sprinkle the potatoes with semolina. Shake the pan vigorously to coat the potatoes and roughen the edges. The fuzzed-up edges are key to achieving that signature crunch.
5. Carefully transfer the semolina-coated potatoes into the hot fat—they will sizzle fiercely! Roast them for about an hour, turning halfway through. Depending on your oven, they may only need 25 minutes per side.
6. Once golden, crispy, and irresistible, transfer the potatoes to a warmed serving dish. Present them at the table as the perfect companion to your festive turkey.
