Korean Turkey Meatballs with Vinegar Dipping Sauce

Course : Mains | Cuisine: Korean | Servings : 2 persons | Cook Time : 30 mins

Some dishes earn their place at the table by being complicated. This one earns its place by being completely, disarmingly simple — and tasting far better than it has any right to at this level of effort.

This recipe is inspired by wanja, a traditional Korean meatball dish seasoned with garlic, soy sauce and sesame that has been a staple of Korean home cooking for generations. What makes it distinctive is not a long list of complex techniques. It is the quality of the seasoning, the restraint of the method and the brilliance of the dipping sauce — a sharp, clean vinegar-based sauce with ginger, toasted sesame and a gentle heat from Korean chilli powder that cuts through the richness of the meatballs perfectly.

We’ve taken this classic and built it around our premium turkey meatballs. Lower in fat than traditional beef, made from 100% whole muscle turkey sourced from a single fully integrated farm and manufactured without the use of antibiotics, our turkey meatballs carry the bold Korean seasoning in this dish brilliantly — holding their texture, taking on colour and delivering a clean, satisfying result every time.

Serve them warm as a starter, pile them onto a sharing board with bamboo skewers as a party appetiser, or pair them with steamed jasmine rice.

Good warm. Good cold. Great every time.

Ingredients

For the meatballs

  • 500g Riverside Foods turkey meatballs
  • 3 tbsp low sodium soy sauce
  • 3 spring onions, finely chopped
  • 3 garlic cloves, finely minced
  • 1 tbsp sesame seeds, toasted and lightly crushed
  • 1 tsp toasted sesame oil
  • Vegetable oil, for frying

For the vinegar dipping sauce

  • 1 tbsp low sodium soy sauce
  • 2 tbsp rice vinegar
  • 1.5cm piece of fresh ginger, finely grated
  • 2 tsp sesame seeds, toasted and lightly crushed
  • 0.5 tsp Korean red chilli powder (gochugaru) — substitute regular mild chilli powder if unavailable
  • 1 small pinch of caster sugar

Method

Step 1 — Make the dipping sauce

Combine all the dipping sauce ingredients in a small bowl — soy sauce, rice vinegar, grated ginger, toasted sesame seeds, Korean red chilli powder and sugar. Stir well until the sugar dissolves completely. Taste and adjust the vinegar or chilli to your preference. Set aside to allow the flavours to develop whilst you prepare the meatballs. The sauce improves with a little resting time, so make it first.

Step 2 — Season the meatballs

In a large bowl, combine our turkey meatballs with the soy sauce, finely chopped spring onions, minced garlic, crushed sesame seeds, sesame oil and a generous grind of fresh black pepper. Toss gently until every meatball is evenly coated in the seasoning. Cover the bowl and leave to rest for 30 minutes at room temperature to allow the flavours to penetrate the meatballs fully. Do not skip this resting step — it is what gives the dish its depth.

Step 3 — Fry the meatballs

Pour enough vegetable oil into a large non-stick frying pan to shallow fry comfortably — approximately 1cm depth. Heat over a medium-high heat until the oil shimmers. Carefully add the coated meatballs in batches, avoiding overcrowding the pan, which would cause them to steam rather than fry. Cook for 12 to 15 minutes, turning regularly, until every meatball is deeply golden and crisp all over and cooked through with no pink remaining in the centre. Remove with a slotted spoon and drain briefly on kitchen paper.

Step 4 — Serve

Arrange the warm meatballs on a serving plate or sharing board. Place the dipping sauce in a small bowl alongside. Garnish with a few extra spring onion slices and a pinch of toasted sesame seeds if desired. Serve immediately.
