The recipe is quick to prep, easy to scale, and delivers a memorable twist that caters to halal, gluten-free, and health-conscious diners.

Serve alongside fluffy couscous, rice, or flatbread. This turkey tagine is a go-to meatball recipe that scores big on taste, performance, and foodservice flexibility.

Ingredients

  • 500 g Riverside halal turkey meatballs (harissa & citrus, plain, or hot n spicy)

  • 2 tbsp olive oil

  • 1 large onion, finely chopped

  • 2 garlic cloves, minced

  • 1 tsp ground cumin

  • 1 tsp ground cinnamon

  • 1 tbsp harissa paste

  • A pinch of saffron strands (optional)

  • Zest & juice of 1 unwaxed lemon

  • Zest & juice of 1 orange

  • 250 ml stock (turkey or veg)

  • 100 g pitted green or black olives

  • Small bunch of fresh coriander, chopped

  • Couscous, rice or flatbreads to serve

Method

  • Blend aromatics & spices – In a tagine or wide, deep pan, heat oil over medium heat. Add onion, garlic, cumin, cinnamon, harissa, saffron; cook for 5 mins until softened and fragrant.
  • Add citrus and liquids – Stir in lemon and orange zest & juice, then pour in stock. Bring to a gentle simmer.
  • Simmer meatballs – Nestle turkey meatballs into the mixture. Cover, simmer on low for 15 mins, gently turning once — inspired by the classic approach of Moroccan lamb tagines.
  • Finish with olives & coriander – Remove lid, scatter in olives and chopped coriander. Simmer uncovered for 10 mins to reduce sauce slightly.
  • Serve – Transfer to a platter, surrounded by couscous, rice or flatbreads. Garnish with extra citrus zest, coriander leaves, and a drizzle of sauce.
