Made with our premium halal, gluten-free turkey breast, this dish delivers on taste, texture, and inclusivity — ideal for caterers, restaurants, or large-scale festive dining events.
At Riverside Foods, we know how important it is to create dishes that everyone can enjoy. That’s why our gluten-free turkey range is crafted to deliver the same quality and flavour as our traditional products. This roulade combines the succulence of our whole-muscle turkey with the vibrant, zesty notes of cranberry and orange, making it a dish that embodies the season.
Perfect for Christmas banquets, corporate catering, or special occasion menus, this recipe is a festive hero that looks as good as it tastes. The natural sweetness of orange and tart cranberry balance beautifully with tender, juicy turkey, while a touch of rosemary adds warmth and depth.
This roulade pairs beautifully with buttery mashed potatoes, roasted carrots, and parsnips, or a side of cranberry and orange compote for extra colour. Perfect for gluten-free Christmas menus, winter buffets, or premium event catering, it’s a dish that brings warmth, inclusivity, and festive cheer to every table.
Ingredients
- 1 GF Turkey Roulade (approx. 850 g)
- 2-3 tbsp olive oil
- Zest and juice of 1 orange
- 2-3 tbsp cranberry sauce or whole cranberries
- Fresh sprigs of rosemary and thyme
- Salt and black pepper
Method
- Pre-heat the oven to 180 °C (Gas mark 4).
- Place the roulade on a roasting tray, drizzle with olive oil and season with salt, pepper and orange zest. Tuck rosemary/thyme sprigs around it.
- Roast for around 55–60 minutes (or until the internal temperature reaches safe poultry standard). Let it rest for 10 minutes before carving.
- While resting, in a small saucepan gently warm the cranberry sauce with the orange juice until it becomes a glaze consistency.
- Carve the roulade into thick slices and drizzle over the cranberry & orange glaze.
- Serve with roasted winter vegetables (parsnips, carrots), steamed greens and optionally a gluten-free bread or potato-dish.
