Crispy Katsu Turkey Escalope Burger
Take your burger menu in a new direction with this Crispy Katsu Turkey Burger, made with a golden, crispy Riverside Foods Breaded Turkey Escalope and layered with fresh iceberg lettuce, crunchy pickled rainbow slaw, creamy katsu sauce, crispy onions, pickled radish and sesame.
Inspired by the Japanese katsu tradition, this recipe combines a crisp, golden breaded coating with the sweet, savoury flavours of katsu sauce and the freshness of pickled vegetables. Served in a soft toasted brioche bun, it brings together contrasting textures and flavours to create a contemporary burger designed to stand out on a foodservice menu.
Katsu is a Japanese dish traditionally made with meat coated in breadcrumbs and fried until crisp. While chicken katsu has become particularly popular internationally, turkey provides an equally versatile base for the dish. Riverside Foods’ Breaded Turkey Escalope makes it easy for foodservice operators to put their own spin on this popular menu format.
This recipe could work particularly well across pubs, casual dining restaurants, cafés, street-food concepts and food-to-go menus. It could be offered as a permanent menu item, a seasonal special or part of an Asian-inspired menu, providing an alternative to the traditional chicken burger.
Ingredients
- 1 Riverside Foods Breaded Turkey Escalope
- 1 brioche burger bun
- 50g shredded iceberg lettuce
- 30g pickled rainbow slaw
- 20ml katsu sauce
- 10g crispy onions
- 10g pickled radish
- 5g black and white sesame seeds
- 5g spring onion, finely sliced
For the pickled rainbow slaw
- Carrot, grated
- Red cabbage, finely shredded
- White cabbage, finely shredded
- Rice vinegar or white wine vinegar
- Pinch of salt
- Small amount of sugar, optional
Method
Prepare the pickled rainbow slaw
Finely shred the red and white cabbage and grate the carrot. Combine the vegetables in a bowl with rice vinegar or white wine vinegar. Season with a pinch of salt and, if desired, add a small amount of sugar to balance the acidity.
Mix thoroughly and leave to pickle while you prepare the burger.
Prepare the garnishes
Shred the iceberg lettuce and finely slice the spring onion.
Drain the pickled radish and prepare the crispy onions and sesame seeds ready for assembly.
Cook the turkey escalope
Cook the Riverside Foods Breaded Turkey Escalope according to the product instructions until golden, crispy and piping hot throughout.
The crispy breaded escalope provides the classic katsu-style texture while offering a halal turkey alternative to the traditional chicken fillet.
Toast the bun
Cut the brioche bun in half and lightly toast the cut sides until golden.
Build the burger
Place the pickled rainbow slaw onto the bottom half of the toasted brioche bun.
Add the shredded iceberg lettuce, followed by the crispy turkey escalope.
Drizzle over the katsu sauce, ensuring the escalope is generously coated.
Add the crunch
Top with crispy onions, pickled radish, sesame seeds and sliced spring onion.
Finish with the top half of the brioche bun and serve immediately.
