Crispy Buffalo Chicken Wings

Course : Lunch/Dinner | Cuisine: American | Servings : 2 persons | Cook Time : 30 minutes

Buffalo chicken wings are a crowd-pleaser, whether you’re hosting a game-day party, a casual get-together, or simply treating yourself to a comfort meal. Their signature tangy, spicy sauce combined with perfectly crispy skin makes them irresistible—and the best part? They’re incredibly simple to make.

The Secret to Crispy Chicken Wings: Baking Powder

Achieving that golden, crispy coating is all about one magic ingredient: baking powder. When mixed with seasonings and dusted over the wings, baking powder works to draw moisture from the skin during cooking, helping it crisp up beautifully in the oven. Be careful not to confuse baking powder with bicarbonate of soda (baking soda)—the latter has a much stronger, alkaline flavor that can leave your wings tasting unpleasantly soapy. Stick to baking powder, and you’ll get perfectly crunchy results every time.

What’s Buffalo Sauce?

The iconic Buffalo sauce originated in Buffalo, New York, back in 1964 at the Anchor Bar. Traditionally, it’s made from a combination of melted butter, hot sauce, and a splash of vinegar for that extra tang. Its perfect balance of spicy, savoury, and buttery flavours makes it the ultimate coating for crispy wings.

How to Serve Buffalo Chicken Wings

Buffalo chicken wings are incredibly versatile and can be served with a variety of sides to round out the experience. Classic pairings include:

  • Blue Cheese Dip: Creamy, tangy, and cooling, this dip is the perfect contrast to the heat of the sauce.
  • Fries: Whether you prefer regular or sweet potato fries, they’re a fantastic complement to the wings.
  • Celery Sticks: These add a fresh, crunchy element to balance out the rich and spicy flavours.

Perfect for Every Occasion

Buffalo chicken wings shine as the star of game-day spreads, potlucks, or even as a main course for a casual family dinner. Their finger-licking goodness and ease of preparation make them a go-to dish for any event.

Simplicity at Its Best

What’s even better? These wings are effortless to make. Toss them with a baking powder seasoning mix, bake until crispy, coat in homemade Buffalo sauce, and serve. No frying, no mess, just straightforward deliciousness.

Crispy Buffalo Wings Recipe

Dry the wings overnight (optional): If time allows, arrange the wings on a rack set over a foil-lined tray and leave them uncovered in the fridge overnight to dry. Alternatively, pat them dry thoroughly with paper towels.

Prepare for baking:

  1. Preheat the oven to 120°C/250°F. Place one oven rack in the lower quarter of the oven and another in the top quarter.
  2. Line a baking tray with foil for easy cleanup. Place a wire rack over the tray and spray it lightly with oil.

Coat the wings:

  1. In a large bowl, toss the wings with baking powder and salt until evenly coated. (You can also shake them in a resealable bag for even coverage.)

Bake the wings:

  1. Arrange the wings skin-side up on the prepared rack. It’s fine if they’re a little snug, as they will shrink during cooking.
  2. Bake on the lower oven shelf for 30 minutes at the low temperature.
  3. Move the tray to the higher shelf, increase the oven temperature to 220°C/425°F, and bake for an additional 40–50 minutes, rotating the tray halfway through. The wings are done when they’re deep golden brown with crispy skin.

Add the sauce:
Transfer the wings to a large bowl, pour over the Buffalo sauce, and toss to coat evenly. Alternatively, serve the wings plain with the Buffalo sauce on the side for dipping.

Serve:
Enjoy immediately with blue cheese dip for the wings and celery sticks.

Buffalo Sauce

  • Whisk together hot sauce, melted butter, and a touch of sugar until smooth. Keep warm or reheat before tossing with wings.

Blue Cheese Dip

  1. Mash blue cheese with sour cream until smooth or leave some chunks if preferred.
  2. Add mayonnaise, lemon juice, and a pinch of salt and pepper. Adjust with milk to reach the desired consistency.
  3. Chill until needed and bring to room temperature 15 minutes before serving.

This method ensures irresistibly crispy wings and perfectly complements them with the bold flavours of Buffalo sauce and a creamy blue cheese dip.
